Today I am sharing the recipe of a lovely creamy soup made with broccoli, carrots and oat milk. Why oat milk? Because that is the only non-dairy milk which you can make just in 30 minutes (25 of which you are soaking the oats).
I had some oat milk left after making this avocado-broccoli spread so I decided to use it in a fast soup recipe.
Broccoli is a fantastic vegetable which falls under the superfoods category (meaning it’s fully packed with health benefits). By the way, broccoli is even more nutrients-rich than cauliflower (but we love it, too ;)).
This soup really takes 10 minutes to make, it’s creamy, flavorful and delicious. And its color is simply amazing!
Soup is a good entree. You can supplement it with a protein-rich salad, avocado toasts, any buddha bowl with rice, quinoa or noodles or some veggie pasta.
