Today I finally got to cook my favorite ever cake – the Carrot cake.
This recipe (as all of the recipes on my website unless I claimed different) is fully mine. I adapted it from lots of other recipes of the classic carrot cake (obviously I was not the one to invent it). I felt like the cake needs to be extremely rich and moist otherwise there was no point in making it at all. It’s not a bread, right?
All Carrot cake recipes are very different and there are thousands of them available on the web. The only thing all have in common is the main ingredient – the carrots. Few words about the cake recipe
My recipe today calls for 3,5 cups of grated carrots. Not less! You shouldn’t be saving on the main ingredient, guys. The cake would be flavorful, hearty, sweet and tender. And moist, of course!
As to flours, I chose 2 types – 1 cup of whole-grain and 1 cup of all-purpose flour. But you know, among all the nuts, raisins and carrots, you won’t feel much of a flour, so I recommend that you bake the cake using only the whole-grain flour (as it’s a healthier option).
For the frosting I used mascarpone, 10% fat cream and powdered sugar. I will be trying different options for the cake frosting in the future. Perhaps I will replace mascarpone with ricotta or with Philadelphia cream cheese. And for a vegan version I will use cashew cream, of course.
In general, I prefer desserts, which, apart from flavor fireworks and sweet tooth satisfaction also bring some health benefits. For instance, I believe that the best bakery products are the ones which contain a minimum amount of dough and a maximum of nuts, fresh and dried fruits. Carrot cake is my absolute favorite here – it has so many carrots, nuts and raisins in it, that you’ll get enough joy and health benefits for the entire week!
