New day and new dessert to be born!
I woke up today with a depressing feeling because I remembered I had run out of all sweet supplies, no bars, no carob choco bites and even my morning delight – favorite dried apricots are gone.
Today I felt like making some raw energy cookies
It’s been a while since I cooked snacks with seeds, so these cookies mainly consist of pumpkin seeds and dates. I also added sunflower seeds and godji berries (which became more dry and crunchy because were put out of the box).
The recipe is simple as always. All you need is a blender.
All energy bars, energy balls and cookies are about the right proportion of dry and sticky ingredients. I used dates as a sweet basis for this recipe. By the way, I always soak dried fruits in hot water for 15-20 minutes before cooking, so that they swell and become more sticky.
Generally I don’ t cook large portions of anything because I love food to be fresh and eaten right away or in case of sweet treats – within 3-5 days
