Continuing popped quinoa series, here is my third sweet energy snack recipe.
These quinoa squares are sweet, light & filling. Apricots and godji combination gives this snack a real caramel aftertaste. So if you are a toffee fan, then these sweets are worth trying!
The easy recipe
Ingredients:
- 1 cup popped quinoa
- 1 cup dried apricots (I got chocolate type – they’re more sweet and chocolaty)
- 5 tbsp godji berries
- 3 full tbsp of almond butter
Chocolate coating:
- 1 tbsp raw cacao + 1 tbsp hot water
Method:
- Firstly, mix apricots and godjis in a food processor.
- Then add rest of the ingredients and mix well again.
3. Scrape out the sweet mass and place it onto a flat surface.
4. Press your ‘dough’ firmly and once it’s well glued and becomes a homogeneous piece, cut it into squares.
5. Cover some with chocolate if you like, it’ll be absorbed by the bars quickly, don’t be surprised.
* I would suggest not adding extra sweet syrups otherwise your snack will be way too sweet.
