Do you like cheese in salads?
In fact, nowadays a lot of different cheeses are added to salads: feta cheese, goat’s chevre, Greek halloumi, blue cheese, camembert, parmesan, mozzarella and others … It’s difficult to choose a particular type, but today we’ll give our preference to goats cheese.
In my opinion, cheese and greens are a great combination and perfectly complement each other in terms of texture – the contrast of thin and crisp of greens with softness of cheese, as well as the disclosure of tastes due to the tandem of fresh/sharp greens and airy creaminess and piquancy of goat cheese.
This salad is also amazingly complemented by sweet jerky cranberries and my beloved rich pecans (by the way, it’s also possible to use walnuts instead, because their tastes are similar). I also recommend adding balsamic cream or vinegar to add sweetness. Do not skip the freshly ground black pepper – its combination with the golden bitterness of olive oil is a real symphony.
