I was running around the city yesterday and really wanted to grab a nice, sweet energy bar anywhere. But it’s still hard to find one in Moscow these days so I decided to make some at home. I was so desperate that I even made two different bars.
But let me split those into two posts so that it’s more interesting!
So, my favorite peanut butter – oatmeal bars
This tastiest recipe only calls for 3 ingredients.
Oatmeal, natural peanut butter and honey (you may use any other sweetener to make it vegan).
Oatmeal is very filling. The other reason I love oats is because they form a perfect base for various desserts. If you want your meal to be smooth and soft, just shred the oats in your blender first.

When it comes to peanuts…even the sound of this word is mouth-watering. I love everything that contains peanuts or peanut butter. It is high in calories, yes. But these are good calories. And so delicious…
So, let’s get down to the recipe:
You’ll need 1+1/4 cup of rolled oats, 1 cup of natural peanut butter (I got a salted crunchy peanut butter but you may use any other or make one yourself ), and 2 tablespoons of raw honey (or any other sweetener of choice).
Blend the oats first so that they crush and get thinner. In a saucepan heat the peanut butter with honey to make the liquid ingredients whole and soft. Combine the warm mass with the oats, mix well with a blender till it forms a homogeneous dough. Scrape everything out with a spatula, form a rectangle and cut it equally into slices. You’ll get 5 lovely bars.
Well, technically I only got 2 now. Since I ate the other 3 right away… Guilty. They are SO delicious. And very much remind me of ‘halva’ if you know what this is (an Eastern delight made of sunflower seeds). Good news – this filling snack will keep you energized for the next 3-4 hours.
