Pesto is a fantastic Italian bright-green sauce which should contain fresh basil, garlic and olive oil, rest is up to your imagination!
I decided to make pesto with rocket (which is one of my favorite greens) and brazil nuts which have a nice brutal earthy flavor.
Pesto is a perfect addition to pasta and risotto as well as salads (this salad is mind-blowing, trust me!). It can also be a nice snack in a form of a dip (for baked veggies or veggie chips).
You may adjust the recipe to your taste, if you want it to be more liquid, add more olive oil or water (or lemon juice). You may also add more salt (I’m just not a big fan of salt in general) or garlic. Oh, I know some people are real chili addicts so I’d say few chili flakes won’t spoil the sauce either!
