Today is just a perfect day for pasta! And all because I have all the necessary sauce ingredients by hand: fresh basil, my favorite arugula and Brazil nuts. As you have guessed it’s going to be pasta with pesto!
I feel like having fusilli, spiral pasta that looks great with pesto sauce. Well, actually it’s pesto sauce that looks great with anything… And there are so many recipes for this sauce.
Pesto is something bright-green, containing basil, garlic and olive oil, anything beyond is up to your imagination. Today, the recipe includes basil, arugula, Brazil nuts (love their brutal earthy flavor), garlic, olive oil, lemon juice, salt and pepper. I also added some nutritional yeast for a superfood boost and cheesy flavor.
Since the sauce is rather dense (and I don’t want to add too much olive oil, so it’s not too heavy and fat, because pesto already has the nuts), I slightly diluted my sauce with water, where the pasta was cooked, and that didn’t spoil the taste and proportions at all!
The pasta is simple: cherry tomatoes, garlic and spinach, and a drop of oat milk
Try these fusilli – they’re delicious! And, as I always say, the most important thing in pasta is to undercook it properly (cook for a minute less than indicated on the package!).
