I’m happy to share the recipe of the most delicious chocolate cookies in the world!
This is something truly outstanding. Deep chocolate flavor, chewy cherries, flavourful crunchy almonds and the contrast of textures of the crunchy crust and gooey filling.
It takes less than 30 minutes tpo make and the taste…you won’t forget.
Just look at the process and this dough! I could eat it without baking 😉
- Wheat flour 90 g
- Dark chocolate ~70% 300 g
- Almonds ~100 g
- Dried cherries 80 g
- Butter 125 g
- Sugar (I prefer a mixture of table and cane sugar) 210 g
- 3 large eggs
- Vanilla extract ½ tsp or a packet of vanilla sugar
- Baking powder 10 g
- Salt ¼ tsp
- Toss the nuts in a frying pan or in the oven until lightly browned, cool and chop them roughly (I prefer to chop the nuts into three parts so that the crunch and almond flavor remain).
- Sift the flour, baking powder and salt into a separate bowl
- Chop the chocolate into pieces and melt in the microwave, turning it on for 10-20 seconds and stirring the mixture, or melt the chocolate on a water bath
- Beat the soft butter and sugar with a mixer until fluffy
- Add the eggs one at a time, beat the finished mixture well at high speed for 2 minutes. You will no longer need a mixer.
- Add the melted chocolate and vanilla extract (if you didn't initially add vanilla sugar to the sugar mixture), mix everything with a spatula
- Pour in the flour mixture in parts, mixing everything until smooth
- Add the cherries and nuts
- Spoon the mixture onto a parchment-lined baking sheet (preferably at a large distance from each other, as the mixture will melt and spread)
- Bake the cookies at 180C for about 15 minutes. Remove from the oven and let cool
