What is your grocery shopping like? Do you stick to a shopping list or do you act on the spot, choosing the most appealing goods?
Recently, I haven’t been making any ingredients list and preferred buying food depending on what’s available and what is most attractive. So, for this long weekend, I bought some rustic sourdough bread, royal champignons, sweet cherry tomatoes, mini peppers, leek, avocados, green salad mix, and pine nuts. And these ingredients formed this bright and nutritious salad (except for the bread which is to be in the next recipe).
This time I won’t recommend any complicated dressings – mushrooms themselves are very rich and flavorful, roasted pine nuts give a hint of smoke, and avocado adds special creaminess. This salad is an interesting combination of sweetness of tomatoes, the freshness of celery and the bitterness of leek and arugula. I also highly recommend adding finely chopped parsley (because it’s fabulous with champignons) and some lemon juice. And, of course, salt, pepper, and olive oil.
