It’s a beautiful day, my friends!
It’s +25 outside and I’m feeling so happy! I woke up with sun lights smiling at me through the curtains, the birds were singing like in paradise and what is more, when I was lying on the floor doing my morning exercise I saw a cute squirrel sitting on the stump. It’s incredible to live next to friendly wild creatures.
Such a lovely day couldn’t be complete without some tasty goodies.
I had a lovely breakfast of cherry protein smoothie jar with chia pudding, then I had my favorite ever lunch – baked sweet potatoes, carrots and zucchini, hummus, some fresh celery and carrots, quinoa with bulgur and a large Greek salad (my version).
And I also cooked an apple-cherry crumble with walnuts for the 5 o’clock!
Whatever, this post is about the dessert, so here it is.
APPLE CRUMBLE WITH CHERRIES & WALNUTS
The fruit crumble is like a destroyed cake – it looks messy but it’s really delicious. It’s just fruits, nuts, 4 egg whites and a little bit of flour baked altogether for 25 minutes. It’s best when served warm and the best ever accompaniment for this dessert is vanilla ice-cream (vegan or basic dairy ice-cream) or vanilla sauce. However, I didn’t make any today, I enjoyed the plain crumble after I had a filling lunch.
I didn’t have a proper baking pan so I baked the crumble in a bundt pan. That doesn’t really make any difference since the crumble is rough and it breaks when you put it on a plate.
