This is something incredible! Coconut, a lot of coconut! Coconut flour, coconut sugar, coconut flakes, coconut butter, coconut oil and coconut nectar.
This cookie is very soft because of the properties of coconut flour and also like a shortbread cookie it requires to eat it while drinking something. But the taste … the taste is amazing. This is my favorite dessert at the moment!
It’s such a pleasure to cook this cookie. Cook a cookie…sounds weird, right?:) Anyways, it’s probably the easiest cookie recipe ever existed!
About the recipe
You’ll need 2 eggs. I haven’t tried to make these cookies with chia seeds or flax egg, however, I’m not sure that eggs in this recipe could be substituted with anything, since coconut flour is pretty whimsical, and the dishes fall apart easily.
When the cookies were baked (there were 4 of them), I decided to make coconut sandwiches and made a coconut cream.
If you’ve never tried coconut butter, I can say that it’s more than a treat. It’s like a bounty, but natural, it’s like an ice cream, but not cold (although you can cool it, too!). This is a true dessert on its own.
Well, it does include a good portion of (high-quality!) calories though, 1 tablespoon is about 110 kcal, but those are healthy. I see calories as an energetic factor, fuel for my body and absolutely not as a trigger for gaining an excessive weight.
After all, I promote working out for everyone on daily basis, and for a good workout, you need to have proper nutrition. If you are active during the day, don’t be afraid to add fats and carbohydrates to your diet, your body needs the balance.

Let’s return to sandwiches
Not only I baked the cookies, but I also made the sandwiches with the coconut cream. What’s more, I felt like topping those with chocolate… Therefore, I also suggest that you make a chocolate sauce – just a minute of your time. Most often I make it from cacao powder, coconut oil and something sweet, like agave syrup.
Of course, you can eat these cookies without any sauces, too, they’re so delicious!
P.S. The only thing, I don’t recommend to transport this cookie, it is too fragile.
